Ingredients

Cow milk ( 2 liters )

50 ml Vinegar

2 l Water

5 tbsp Sugar

1 tbsp Cornflour (Cornstarch)

pinch Cardamom Powder

For garnishing Saffron Powder

Step 1Prepare the Chena (Cottage Cheese)

Bring the cow milk to a boil in a heavy-bottomed pot.

Once boiled, switch off the heat and let the steam dissipate for a moment.

Mix the vinegar with water and add it gradually to the milk, stirring gently until the milk curdles completely.

Pour in some cold water to lower the temperature; this stops the cooking process and ensures the chena remains soft and creamy.

Strain the mixture using a muslin cloth or a fine sieve to separate the chena from the whey.

Squeeze out as much water as possible. The chena should be moist but firm enough to handle.

Place the chena in a bowl, add the fine-grain sugar and corn starch, and knead the mixture thoroughly until it becomes smooth, soft, and completely free of lumps.

To check if it is ready, take a small amount of the mixture and roll it between your fingers. If it forms a smooth, non-sticky ball, it is ready.

Remove from heat and stir in the cardamom powder. You may also add optional flavorings like rose or kewra water at this stage.

Allow the mixture to cool completely. You can place it in the refrigerator to prevent a dry crust from forming.

Once cooled, give the mixture a final knead to ensure it is smooth.

Shape the Sandesh into balls, press them into molds, or cut them into your desired shapes (like squares/barfi). Garnish with dissolved saffron before serving.
