Ingredients

500 Bottle Gourd (grated)

1 cup Boiled Milk

75 Unsweetened Khoa

3 cups Sugar

5 tbsp Clarified Butter (Ghee)

1 tsp Cardamom Powder

handful Cashew Nuts

handful Raisins

as needed Melon Seeds

Instructions

Wash and peel the skin of the bottle gourd, then grate it using a fine grater.

Squeeze the grated bottle gourd firmly to strain out all the excess water.

In a cooker, heat a little ghee and roast the cashew nuts and raisins until golden and plump. Remove and set aside.

Add more ghee to the cooker and sauté the grated bottle gourd for about 10 minutes.

Pour in the milk and cook until the bottle gourd has absorbed the liquid.

Add the unsweetened khoa and mix well until it melts and the mixture turns rich.

Once the excess moisture evaporates, stir in the sugar and cook until it dissolves completely.

Continue cooking until the halwa reaches your desired consistency.

Stir in the remaining ghee, cardamom powder, roasted cashews, raisins, and melon seeds.
