Ingredients

2 cup Papaya

1 cup Sugar

1 cup Cornflour (Cornstarch)

2 tbsp Clarified Butter (Ghee)

1 tbsp Cardamom Powder

6 Cashew (chopped)

Instructions

Blend the chopped papaya into a smooth puree and set aside.

In a heavy-bottomed pan, add a teaspoon of ghee and sauté the cashews and melon seeds until golden; remove and set aside.

Pour the papaya puree into the same pan and cook on medium heat until the raw smell disappears.

Add sugar and stir continuously until it dissolves and the mixture thickens.

Pour in the corn flour slurry slowly, stirring constantly to prevent lumps.

Add the remaining ghee and cardamom powder, cooking until the mixture turns glossy and leaves the sides of the pan.

Stir in the roasted nuts.

Transfer the mixture to a greased tray or bowl, smooth the top, and let it set for at least 30 minutes.
