Ingredients

For flavored milk :

1 Full-Fat Milk

8 piece Almond (sliced)

8 piece Pistachio (sliced)

1 tsp Cardamom Powder

1 cup Sugar

pinch Saffron Strands

For chena :

1 Full-Fat Milk

2 tbsp Water

2 tbsp Vinegar

as needed Cold Water

1 tsp Refined Flour

For sugar syrup :

1 1⁄2 cup Sugar

6 cup Water

Instructions

Boil milk in a heavy-bottomed pot. Add almonds, pistachios, cardamom, and saffron. Simmer for 10-12 minutes until slightly reduced but still thin. Add sugar and cook for another few minutes, then let it cool to room temperature.

Mash the drained chena with your palm for 4-5 minutes until smooth. Add refined flour and mix lightly. Shape into small, crack-free discs.

Bring sugar and water to a boil in a wide pan. Drop the discs in, cover, and boil on high heat for 10-12 minutes.

Immediately transfer the cooked discs into a bowl of ice-cold water for 10-12 minutes.

Gently squeeze the excess water from the discs and place them into the prepared flavoured milk. Refrigerate for 2-3 hours before serving chilled.
