Ingredients

3 cup Ash Gourd

1 cup Sugar

2 tbsp Clarified Butter (Ghee)

1 tsp Cardamom Powder

handful Cashew Nuts (Chopped)

handful Raisins (Chopped)

Yellow Food Coloring

Instructions

Heat a little ghee in a pan and roast the cashew nuts until golden brown. Remove and set aside.

In the same pan, roast the raisins until they plump up. Remove and set aside.

Wash the ash gourd, remove the seeds, and grate the white flesh, discarding the outer green layer.

Place the grated ash gourd in a sieve to drain excess water, but do not squeeze it too dry as some moisture is needed for cooking.

Transfer the grated vegetable to a pan and sauté over medium-low heat for 10-15 minutes until tender.

Add the sugar and stir until it completely dissolves.

Stir in the cardamom powder and one tablespoon of ghee.

Add the yellow food coloring if desired and mix until well incorporated.

Fold in the roasted cashews and raisins

Finish by adding an additional tablespoon of ghee, stir well, and serve warm.
