Ingredients

4 tbsp Clarified Butter (Ghee)

handful Cashew Nuts

1 tbsp Raisins

1 cup Semolina(Rava)

3 cup Water

1 tsp Orange Food Colour

pinch Saffron Strands

2 tsp Oil

2 cups Sugar

1 tsp Cardamom Powder

Instructions

Heat 1 teaspoon of ghee in a pan and roast the cashew nuts until golden. Add the raisins, sauté until they plump up, then remove and set aside.

In the same pan, add 1/2 tablespoon of ghee and the semolina. Roast on low heat for about 10 minutes until golden and fragrant, then set aside.

In a separate wide saucepan, heat the water. Once hot, stir in the food coloring or kesar powder.

Gradually add the roasted semolina to the hot water while stirring continuously to prevent lumps.

Once the semolina absorbs the water and begins to cook, add the saffron strands and 1 tablespoon of ghee.

Add the refined oil to ensure a soft, flowy consistency.

Once the semolina is fully cooked, add the sugar and stir until completely dissolved.

Stir in the cardamom powder along with the roasted cashews and raisins.

Finish by adding the remaining 2 tablespoons of ghee, mix well, and turn off the stove.
