Authentic Homemade Milk Cake (Kalakand) is a classic, rich Indian sweet perfect for festive celebrations. This simple process transforms full-fat milk into a soft, grainy, and decadent dessert using just a few pantry staples like sugar, a pinch of citric acid, and ghee. With careful reduction and a slow-setting technique, you can achieve that signature deep-colored, melt-in-the-mouth texture right in your own kitchen. It is both elegant and delicious.

2 1⁄2 Full-Fat Milk
250 Sugar
1 pinch Citric Acid
to taste Cardamom Powder
3 tbsp Clarified Butter (Ghee)
2 tsp Water
For garnishing Pistachio Flakes

Grease a deep square steel container (like a Tiffin box) thoroughly with oil or ghee. Line it with butter paper to ensure easy removal of the finished sweet.

Pour the full-fat milk into a large, heavy-bottomed iron pan greased with a little oil or ghee to prevent sticking. Add a splash of water to the pan before the milk. Bring it to a boil over medium-low heat, stirring continuously to prevent burning.

Continue cooking and stirring the milk, scraping down the sides of the pan. Reduce the volume of the milk to half. The consistency should become thick and slightly grainy.

Dissolve a pinch of citric acid in two teaspoons of water. Add this mixture to the thickened milk in small batches, stirring continuously for about a minute after each addition. The milk will begin to curdle. (If citric acid is unavailable, use 8-10 drops of lemon juice or 1-1.5 teaspoons of curd/dahi instead).

Once the grainy texture forms, incorporate the sugar. Add it in batches, mixing for a minute after each addition. Do not add all the sugar at once, as it may release excess water and make the final cake rubbery.

Once the sugar has melted and the mixture color begins to change, add the clarified butter (ghee) in small batches, stirring well after each addition. You may stir in optional cardamom powder at this stage for flavoring.

Continue cooking until the mixture is thick, has a grainy texture, and shows a slight froth on top.

Transfer the piping hot mixture into your prepared steel container. Cover it with a lid and wrap the entire container in a blanket to trap the heat. This insulation is crucial for achieving the characteristic deep-colored center of a traditional milk cake. Let it rest in a warm place or a closed oven for 6 to 7 hours, or preferably overnight.

Once set, remove the container from the blanket. Run a knife along the edges, invert the container onto a plate, and tap it to release the cake. Slice into bars or squares and serve.
