Ingredients

1 Full-Fat Milk

1 tbsp Curd

Black Palm Jaggery 200 g

Pour the full-fat milk into a vessel. Cook it over low-to-medium heat, stirring intermittently to prevent it from sticking to the bottom or sides, until it has reduced to half of its original quantity.

While the milk is reducing, chop the palm jaggery into small, fine pieces to ensure it melts easily later.

Once the milk has thickened and is reduced by half, turn the flame to low and add the chopped palm jaggery. Stir continuously until the jaggery has completely dissolved into the milk.

Turn off the flame and transfer the milk and jaggery mixture into a deep bowl. Allow the mixture to cool down to room temperature. You can whisk it occasionally to speed up the cooling process.

Once the mixture has reached room temperature, add the curd (as a culture) to the bowl. Whisk or beat the curd into the mixture thoroughly until it is completely smooth and lump-free.

Transfer the mixture into terracotta or earthen pots, which help achieve the authentic texture and aroma. Cover the pots securely with aluminum foil.

Keep the pots aside at room temperature for 3 to 4 hours to allow the yogurt to set.

Once the yogurt has set firmly, place the pots in the refrigerator to chill before serving.
