Ingredients

For the Sugar Syrup:

1 cups Water

2 cups Sugar

A few Saffron Strands

1 tsp Cardamom Powder

For the Gulab Jamun Dough:

2 cups Hariyali Mawa

3 tbsp Milk Powder

3 tbsp Arrowroot Powder

1 cup All-Purpose Flour (Maida)

as needed Clarified Butter (Ghee)

Instructions

Step 1Prepare the Sugar Syrup

In a vessel, add 1 ½ cups of water and 2 ½ cups of sugar.

Cook on a medium flame while stirring continuously. Remove any impurities that float to the top.

Reduce the flame and continue to boil until the syrup reaches a 1-thread consistency.

Turn off the flame, add a few strands of saffron and ¼ tsp of green cardamom powder, then mix well.

Step 2Prepare the Gulab Jamun Dough

In a bowl, combine 2 cups of Hariyali Mawa, 3 tbsp of milk powder, 3 tbsp of arrowroot powder, and ¼ cup of all-purpose flour (maida).

Knead the mixture well until it forms a smooth dough.

Step 3Frying and Soaking

Form the dough into small balls. Keep them small, as they will expand significantly in the syrup.

Heat ghee in a kadai. Once hot, reduce the flame to low. Gently add the balls and fry them until they turn a beautiful golden brown color. Ensure the heat is low to cook them evenly from the inside.

Immediately transfer the fried gulab jamuns into the prepared sugar syrup to soak.

Allow them to soak in the syrup for 1 to 2 hours before serving.
