Ingredients

2 cup Gram Flour (besan)

2 tbsp Clarified Butter (Ghee)

2 tbsp Milk

Cooking :

3 cup Clarified Butter (Ghee)

1 cup Milk

Sugar syrup :

1 cup Sugar

1 cup Water

1 tsp Cardamom Powder

few Saffron Strands

pinch Nutmeg (GRATED)

For garnishing Almond (sliced)

For garnishing Pistachio (sliced)

Instructions

Combine gram flour, 2 tbsp ghee, and 2 tbsp milk in a bowl. Rub well, press down firmly, and let it rest for 15-20 minutes.

Break the mixture and pass it through a large-hole sieve (or pulse briefly in a mixer) to achieve a grainy texture.

Line a tray with butter paper or grease it with ghee.

Melt half the remaining ghee in a kadhai and add the prepared gram flour. Stir well, then add the rest of the ghee.

Switch off the flame, gradually add milk while stirring (it will bubble), then cook for 4-5 minutes on low flame until a slight glaze appears.

Switch off the flame and stir for a few minutes to cool slightly.

In a separate pan, boil sugar, water, cardamom, saffron, and nutmeg to achieve one-string consistency.

Stir the syrup into the cooked flour mixture for 1-2 minutes until combined.

Spread evenly in the prepared tray, garnish with nuts, and let it set for at least 3 hours.
