Ingredients

1 cup Black Gram (Urad Dal)

2 tbsp Hot Milk

1 cup Clarified Butter (Ghee)

1 cup Almonds (Chopped)

1 cup Pistachios (chopped)

4 tbsp Coconut (desiccated)

Gond 1/2 cup

1 cup Water

1 cup Sugar

For garnishing Cashew (chopped)

1 tsp Cardamom Powder

1 tsp Ginger Powder

Grind the whole black gram into a coarse powder. Mix with 2 tablespoons of warm milk and 2 tablespoons of ghee. Let it rest for 15 minutes, then sieve to create a uniform, textured consistency.

Heat 1 tablespoon of ghee in a pan. Roast the chopped almonds and pistachios for 2 minutes. Add desiccated coconut and sauté briefly until fragrant. Remove and set aside.

In the same pan, heat 2 tablespoons of ghee. Fry the edible gum until it puffs up and turns a uniform golden-brown. Remove from heat.

In a large pan, heat the remaining ghee. Add the prepared dal mixture and roast on medium-low heat for 10–12 minutes until it turns a deep golden brown.

In a separate small pan, heat sugar and water on low. Cook until it reaches a one-string consistency.

Add 4 tablespoons of milk to the roasted dal to create a smooth texture. Mix in the roasted nuts, fried gum (slightly crushed), cardamom, and dry ginger powder.

Pour the prepared sugar syrup into the dal mixture and stir well. Allow it to rest for 5–10 minutes until it thickens.

Once cooled enough to handle, form into desired shapes (traditional round or cylindrical). Garnish with a whole cashew on top and serve
