Ingredients

Dough :

1 tsp Salt

2 cups All-Purpose Flour (Maida)

pinch Turmeric Powder

3 tsp Oil

as needed Water

Puran :

1 cup Bengal Gram (Chana Dal)

1 cup Jaggery (Powdered)

1 tbsp Clarified Butter (Ghee)

1 tsp Cardamom Powder

Instructions

In a bowl, combine maida, salt, and turmeric. Gradually add water and 2 tsp of oil to knead a soft dough. Apply 1 tsp of oil over it, cover, and let it rest for 1 hour.

Soak chana dal for 2 hours. Pressure cook with water for 5-6 whistles. Mash the cooked dal thoroughly.

In a pan, mix mashed dal and powdered jaggery. Cook on medium heat for 10-15 minutes until thickened. Stir in cardamom powder and ghee. Once cooled, shape the mixture into small, firm balls.

Divide the rested dough into equal portions. Flatten a dough ball, place a puran ball in the center, and seal the edges tightly.

Place the ball between two greased butter papers and gently press/roll into a flat disc. Heat a tawa, apply a little ghee, and cook the poli on both sides until golden brown spots appear. Serve hot.
